Star chef Peter Goossens takes over running hotel restaurant in Knokke

Entrepreneurs Marc Coucke and Bart Versluys have engaged three Michelin starred chef Peter Goossens to take over the kitchen of the deluxe hotel La Réserve in Knokke.

Goossens, a familiar face on TV cooking shows including the dedicated cooking channel Njam!, won his three stars with the fine dining restaurant Hof Van Cleve in Kruisem in East Flanders (formerly known as Kruishoutem before a merger with its neighbour Zingem).

Goossens, the two businessmen said, will be given the full control over the kitchen of the hotel. In the meantime, the two entrepreneurs plan to invest in upgrades to the hotel’s services, including a new lobby and an upgrade to the hotel’s spa and wellness facilities.

The total investment, including the restaurant, comes to €7 million.

"Peter will take full responsibility for coordination and recipes for the new restaurant of La Réserve," the company said in a press release. “It will be a top-of-the-range brasserie: well-known dishes, created with great respect for local products.”

The new restaurant will open in 2023.

"La Réserve will be a Mecca for gastronomy, both for hotel guests and for visitors to Knokke Heist,” Goossens himself said.

“I want to create a kitchen with dishes that I myself like to eat every day and that I look forward to offering to guests of La Réserve. As we are close to the sea, that will be an important source of inspiration -- but not the only one", he said.

Hotel La Réserve is situated on Knokke’s main boulevard, directly facing the Casino.
